Honey Roasted Beets &Carrots
4 Beets (medium)
4 Carrots (large)
2 tbsp. honey
1/2 tsp sea salt
1 tbsp. olive oil
1 tbsp. butter
2 Tbsp. honey
1 Tbsp. fresh herbs (thyme, rosemary, dill, etc.)
Preheat oven to 450 degrees. Wash and peel vegetables. Chop into even 1/2 in pieces. Add vegetables to a sheet pan and toss with olive oil and salt. Spread the vegetables out on the pan and roast for 20-25 min. Meanwhile, in the microwave, melt the butter. Then whisk in the honey. Remove the beets and carrots from the oven and pour the honey butter mixture over them. Toss until well coated. Return to the oven for 5 more min. Serve tossed with herbs.
